Lemon-Dill Finishing Butter


Finishing butter, also called compound butter, is a great way to make a sauce. This Lemon-Dill Finishing Butter is great with fish.

1/4 pound room temperature butter

2 tablespoons fresh dill (dried can be used, but use less)

zest of 1 lemon

In a small bowl, mix together the butter, dill, and lemon zest. Roll into a log and place on plastic wrap. Roll up in the plastic and store in the refrigerator. The butter can be frozen: wrap the plastic-covered butter roll in aluminum foil and store in refrigerator for up to 2 months.
