Peanut Butter

Although the recipe is for peanut butter, expand your taste buds by trying other kinds of nuts. I prefer my peanut butter to be a bit grainy. By making my own, I can have it any way I want it. And you can too.

  • 2 1/2 cups shelled peanuts (raw or roasted)
  • 4 tablespoons neutral oil (optional)
  • 2 tablespoons honey (optional)
  • salt to taste

  1. Place the peanuts in the bowl of a food processor fitted with a metal blade or blender. Process until the peanuts have reached a grainy, coarse stage. Scrape processor bowl.
  2. If using honey, add at this point.
  3. Drizzle in oil slowly while continuing to process. Add only enough to reach the smoothness you want.
  4. Taste, and add salt if desired.
  5. Store in an airtight container in the refrigerator.

For chunky peanut butter, reserve 1/4 to 1/2 cups of the peanuts. Roughly chop and add when the peanut butter is smooth.
