Savory Soup Sunday: Tuscan-Style Chicken Stew

A hearty stew for those cold and blustery days. Or when there's a sale on chicken.


  • skinless, boneless chicken breasts, thighs, and/or legs from 1 chicken
  • 2 minced garlic cloves
  • 3 carrots, peeled and cut into medium slices
  • 3 celery stalks, cut into medium slices
  • 1 small onion, chopped
  • 1 pint crushed tomatoes
  • 2 small sweet potatoes, peeled and sliced thinly
  • 1 quart chicken stock
  • 1 1/2 tablespoons Italian herb seasoning
  • 1/2 cup kale or spinach


  1. Place the chicken in the bottom of a slow cooker.
  2. Add the remaining ingredients except for the kale or spinach.
  3. Cook on high for 4-6 hours, depending on your slow cooker.
  4. About an hour before it's done, check for seasoning and add the kale or spinach.
  5. Thicken with a flour/water slurry or add tomato powder if necessary. Check seasoning again.
  6. Serve hot.


This stew is a great way to use things from your extended pantry. I always have chicken in the freezer or in my canning pantry. The tomatoes, sweet potatoes, and stock were pantry items. And while I used fresh carrots and celery, I have canned and dehydrated versions of them.
