Thanksgiving Soup

Got Thanksgiving leftovers? Count your blessings. This soup is a great way to use them. Even the stuffing and cranberry sauce! Don't have turkey? It works great with chicken. Sweat your vegetables in oil, leave out the meat, and use vegetable stock, and you have a tasty vegetarian version.


  • 1/3 cup chopped celery
  • 1/4 cup chopped onion
  • 1/2 cup sliced carrots
  • 1 tablespoon butter
  • 4 cups turkey or chicken stock
  • 2 cups cooked turkey, chopped
  • cooked stuffing for garnish
  • cranberry sauce for garnish


  1. Melt the butter in a large saucepan on medium. Add the celery, onions, and carrots. Sweat until translucent.
  2. Add the turkey or chicken stock and bring to a boil. Reduce heat to simmer and cook until vegetables are almost done.
  3. Add the turkey and simmer until heated through.
  4. Check seasonings.
  5. Ladle into bowls, and add a spoonful (or more) of stuffing and cranberry sauce.


This recipes assumes you used herb bread cubes or seasoned your stuffing when you made it. If not, poultry seasoning to taste can help punch up the flavor.
