Goulash Soup

A soup version of one of my favorite dishes. Economical, versatile, and tasty: what more could you want? If you want a vegetarian version, leave out the meat and use a vegetable stock. Slow cookers do not all heat the same. You know yours best, so adjust times as necessary.


  • 8 ounces ground beef, turkey, or pork
  • 1/3 cup chopped onion
  • 1/2 cup chopped green bell pepper
  • 3/4 cup chopped red bell pepper
  • 1 teaspoon red pepper flakes
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon Italian herb blend
  • 8 ounces tomato sauce
  • 1 tablespoon tomato powder
  • 1 14.5 ounce diced tomatoes, with liquid
  • 4 cups beef, chicken, or vegetable stock
  • 3/4 cup dry rotini or other pasta of choice
  • Salt and pepper to taste
  • Shredded mozzarella or Parmesan (optional)


  1. Lightly brown and drain the meat. If using a lean meat, this step can be skipped.
  2. Put the meat and all the other ingredients except the pasta, salt, pepper, and cheese in a slow cooker. Cook on low for about 3 hours.
  3. Check the liquid level, and add more if necessary. Add pasta and check seasonings.
  4. Cook on high for about another hour, or until pasta is done.
  5. Serve topped with shredded mozzarella or Parmesan, if desired.
