Sweet Potato Soup

Sweet Potato Soup

A savory soup that takes advantage of the natural sweetness of sweet potatoes. And a great way to use leftover sweet potatoes.

  • 8 ounces cooked sweet potatoes
  • 1/8 teaspoon red pepper flakes
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground ginger
  • 1/2 cup milk, half and half, or cream
  • salt and pepper to taste
  • 1 1/2 teaspoons butter (optional)

  1. If necessary, drain the sweet potatoes, but retain the liquid. If there is no liquid, prepare stock of choice or water.
  2. In a medium pot over medium heat, warm the sweet potatoes, adding liquid as necessary to avoid sticking.
  3. When hot, mash or puree to desired texture.
  4. Return to pot on low heat and mix in the spices and pepper flakes.
  5. Stir in the milk, half and half, cream, or stock, adding only enough to achieve the desired consistency.
  6. Add salt and pepper to taste.
  7. If desired, stir in the butter.
  8. Serve hot.

Adjust the spices to your liking.

If you'd prefer not to use dairy, replace with water or chicken or vegetable stock.
