Nut-Free Cheesy Powder

A nut-free alternative to cheese powder. Great for doughs and on popcorn.

  • 1 cup peeled and cooked sweet potato
  • 1 cup peeled and cooked carrot
  • 1/4 cup vegetable cooking water (may need more)
  • 1 1/2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/4 cup nutritional yeast
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/8 teaspoon turmeric
  • 1/8 teaspoon chili powder

  1. Place all the ingredients in a blender and process until smooth. (See note about adding water to use as sauce.)
  2. When smooth, spread thinly on a fruit roll-up tray or silicone sheet and place in dehydrator on 110 degrees overnight.
  3. In approximately 6-8 hours, break apart and turn the cheese. Dehydrate another hour, or until dry.
  4. Grind in a spice mill, coffee mill, or food processor to the desired consistency.
  5. Place back on a sheet and dehydrate for an additional 1-2 hours.
  6. Store in an airtight container.

Adjust seasonings to taste. If you want to use it as a sauce, you may need to add more veggie water to get to the consistency you want. Dehydrating times will vary based on dehydrator and ambient temperature and humidity.
