Baba Ghanoush

Baba Ghanoush

A tasty and healthy snack. Great with cucumber slices, pita bread, and pumpernickel.


  • 1 large eggplant, roasted and the insides scooped out
  • 4 roasted garlic cloves
  • 1/4 roasted red bell pepper
  • 1 tablespoon Greek yogurt
  • 2 tablespoons whey
  • 1/2 teaspoon red pepper flakes
  • 2-3 tablespoons lemon juice
  • 1 1/4 teaspoon dukkah spice (optional)
  • salt to taste (optional)


  1. Combine all the ingredients except 1 tablespoon lemon juice, dukkah spice, and salt in a blender or food processor. Processor until smooth. Add the remaining lemon juice if necessary to obtain the desired consistency.
  2. Spoon into a container and mix in the dukkah and salt (if using). Cover and refrigerate at least 3 hours before serving.


Tahini is more traditionally used in baba ghanoush. If desired, use 1 tablespoon of tahini instead of the yogurt and whey.
