(Makes about 4 dozen)
3/4 cup vegetable shortening
1 cup firmly packed dark brown sugar
1/2 cup granulated white sugar
1/4 cup water
1 teaspoon vanilla extract
3 cups old-fashioned oatmeal (not the quick-cooking type)
1 cup and 1 tablespoon all-purpose flour
1/4 cup black walnuts, finely chopped
1/2 cup shredded coconut
Preheat oven to 350 degrees.
Grease a cookie sheet, or use parchment paper.
In a large bowl, beat together the shortening, brown and white sugars, egg, water, and vanilla until light and creamy.
Mix in the remaining ingredients by hand until thoroughly blended.
Drop by teaspoonful onto a prepared cookie sheet. Bake for 12-15 minutes. Let sit on sheet for 5 minutes before removing to a cooling rack.
Store in an airtight container.
