Yield: About 3 cups

Cornbread on Demand

Now you can have cornbread whenever you want.


  • 1 1/3 cup all-purpose flour (preferably unbleached)
  • 1 cup yellow cornmeal
  • 6 tablespoons granulated sugar
  • 2 tablespoons baking soda
  • 1/3 teaspoon salt
  • Combine ingredients and store in an airtight container.


  1. Preheat oven to 400 degrees. Butter or grease an 8-inch square baking dish.
  2. In a small bowl, combine 2 tablespoons vegetable oil, 1 egg, and 1/3 cup of milk.
  3. Pour 1 1/2 cups of the dry cornbread mixture and any other dry ingredients you want to add (such as herbs and spices) into a medium bowl.
  4. Gently combine the liquid ingredients into the dry ingredients. Pour into pan and bake approximately 15 minutes, or until lightly golden and toothpick inserted in to the center comes out clean.


The dry mix will stay fresher longer if stored in the freezer.

You can add crushed red pepper flakes or other dry seasonings to the mix, but I prefer to do so when I'm making the cornbread.

You can add dry milk to the mixture and then when making the bread, add water in the amount of milk called for in the recipe.

An artificial sweetener such as stevia can be used instead of sugar.
