Almost Wholeberry Cranberry Sauce

1 cup water

1 cup sugar

zest of 1 medium orange

In a medium saucepan, combine water, sugar, and orange zest. Stir well. Bring to a boil over medium heat, stirring occasionally. When boiling is reached, carefully add the cranberries. Bring to a boil. Reduce heat and cook for approximately 10 minutes, stirring often. Carefully process about 1 cup of the sauce in a food processor and pulse until roughly chopped.  Return to the pan and boil gently for about 8 minutes or until the sauce reaches the desired thickness.

Pour into jars or a bowl.

Makes approximately 3 cups, depending on thickness.

Of course, you can use a immersion blender instead of a food processor. And, you can purify all of the sauce rather than just a portion. But then it would be Not Wholeberry Cranberry Sauce.
